KJ’s Bubble and Squeak

1 onion

Leek

Kale

Spinach

Chard

Cabbage

Thyme

Rosemary

Parsley

2 Eggs

Cut potatoes into small slices/chunks. Fry on a low heat until golden brown.

Fry onions with vegetables with potatoes. Season with salt and pepper and herbs

Fry until mixture develops toasted bottom, then flip and continue cooking until both sides are well cooked.

Fry one egg, and serve on top of bubble and squeak, sunny side up.
